Logbook will be assigned to the restaurant Manager and should be renewed each Year. Daily, the restaurant Manager fills in highlights of the day's activities which should have past figures as a comparison:
1. Number of staff for each meal period.
2. Total revenue for each meal period
3. Total number of covers for each meal period
w/ breakdown for food & beverage.
4. Total daily revenue and number of covers.
5. Guest comments / problems / questions
6. Housekeeping / Engineering problems
8. Promotions / In - house events
9. General comments Daily, HOD should read logbooks, comment, and sign.
